Hemingway’s - Open for dinner only, this spot is a favorite of locals. What to expect: This hotel, with its strongly tropical ambience, is part of the lushly landscaped and self-contained Grand Cypress Resort that covers 1,500 acres. The 18-story, pyramid-shaped Hyatt Regency has three guestroom wings and a 200-foot atrium lobby. The hotel opened in 1984, and the rooms were completely renovated in 1996. Free shuttles are available to the nearby theme parks. Amenity highlights: Recreational choices include an 800,000-gallon pool; 45 holes of Jack Nicklaus–designed championship golf; and equestrian, tennis, and fitness centers. The private lake offers sandy beaches, canoeing, and sailing. Supervised activities are offered for children and families, and, on Saturday nights (weather permitting), kids are invited to a beach fire to roast marshmallows and make s’mores. The resort offers five restaurants and four lounges. Insider tip: Guests can walk through 45 acres of natural Florida environment by taking the Audubon Walk, with its elevated boardwalk and interpretive signs.
